As opposed to my other basic sweet dough recipe, this basic recipe contains vanilla pudding.

The vanilla pudding gives extra fluffy results, and since this is a very versatile recipe it can be used for various types of buns, such as American Cinnamon Buns or Lemon Pop-up Rolls.

 

French Vanilla Sweet Dough – basic recipe

  • 1 ¾ oz. (50 g) fresh yeast
  • 2 tablespoons tepid water
  • ½ cup (125 ml) milk or cream
  • 2 tablespoons butter
  • 4 tablespoons Jell-O French Vanilla Pudding powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup (50 g) regular sugar
  • ½ teaspoon salt
  • 2 cups (260 g) all-purpose flour

Dissolve the yeast in the tepid water. Set aside for 5 minutes to activate the yeast.

Pour the milk or cream into a small bowl and warm in the microwave 1-2 minutes. Add the butter and stir until melted.

Put the remaining ingredients into a mixing bowl.

Add the milk/butter mixture and the dissolved yeast.

Use the dough hook attachment and mix until everything is well blended.

Cover the bowl and leave to rest for 15 minutes.

After the dough has had its 15 minute rest, mix on medium speed for 20 minutes.

It may look like it needs more liquid, but don’t worry, just continue mixing. Don’t be tempted to add more flour.

Place the dough in a lightly greased mixing bowl, cover with the dish towel and leave to rise for about 40 minutes or until doubled in size.

The dough is now ready to use and you could make lovely sweet buns such as these American Cinnamon Rolls or Lemon Pop-up rolls.

  2. i only have dry instant yeast, how much do I use. Also what piece of equipment are you using to mix the dough. I’ve never seen that kind of mixer before. Look forward to your response, thanks.

      Hi Deborah, about 10-12 grams of dried instant yeast can replace 50 g fresh yeast. The mixer here is an Assistent Original.

  3. I used dried yeast but when the chef was making the bread she said it will look too dry but it will be fine. My was extremely sticky and a paste consistency. It did not form a dough ball at all. Do you have to add more flour if using dried yeast?
