Hello everyone!

These cookies are so good and they will more or less melt in your mouth.. luckily they are easy to make, too.

Here is the recipe, enjoy!

Pecan Cookies

  • 5 oz. (125 g) pecans
  • 3  1/4 cups (400 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1  1/2 cup (345 g) unsalted butter
  • 1/2 cup (120 g) regular sugar
  • 1/2 cup (65 g)  powdered sugar + extra for dusting the baked cookies
  • 1 teaspoon vanilla extract

Preheat the oven to 350˚F (180˚C).

Line a baking tray with baking parchment.

Finely grind the pecans and tip into a bowl. Add the flour and salt and stir to combine.

Put the butter into a mixing bowl and beat until fluffy. Add the vanilla, sugar and powdered sugar and beat for a few minutes.

Add the pecan mixture to the batter and mix until everything is well blended.

Use a small ice cream scoop (1 inch/2,5 cm) to make small mounds and arrange them on the lined baking tray. Make sure you leave some space between them to allow for spreading during baking.

If you don’t have a small ice cream scoop just use a regular tablespoon.

When the cookies are ready baked, use a small sieve and dust the cookies liberally with powdered sugar.

Repeat after 5 minutes.

Now nothing remains but to enjoy these cookies with a class of cold milk or a cup of tea or coffee.
