Hello everyone. “Nothing but the kitchen sink cookies” are soft, delicious cookies made from whatever you have in your kitchen cupboard, this is a recipe you can vary in endless ways.

I made them with coconut, cranberries. walnuts and chocolate. You could replace these four ingredients with other things such as breakfast cereal, white chocolate, etc. Use what you like best.

 

Nothing but the kitchen sink cookies

  • 1 cup (230 g) unsalted butter, at room temperature
  • 3/4 cup (170 g) regular sugar
  • 3/4 cup + 1 tablespoon (150 g) soft light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (260 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1  3/4 oz (50 g) dried cranberries
  • 1 cup (100 g) oats
  • 1/2 cup (50 g) coconut
  • 3  1/2 oz. (100 g) walnuts
  • 10  1/2 oz. (300 g) chocolate chips

Preheat the oven to 347 °F (175 °C), fan setting.

Put the butter, sugar and light brown sugar into a bowl and beat until fluffy, about 3 minutes.

Add one egg at a time, then add the vanilla extract. Beat for another 2 minutes.

Mix the flour and baking soda with the walnuts, cranberries and coconut, then add this dry mixture to the batter. Beat until everything is well blended.

Stir in the chocolate chips.

Use an ice cream scoop to make small mounds of dough onto a lined baking tray.

Bake for about 9-11 minutes. I like to place some extra coconut, cranberries and chocolate chips on top of each cookie as soon as they come out of the oven.

Leave to cool on the baking tray for about 10 minutes.
