This recipe was give to me by my cousin Linda Stensrud Kjeilen, a lovely meringue cake with a mocca/caramel filling, topped with banana and whipped cream.
The perfect weekend treat…
Marengue Cake by Linda
- 4 egg whites
- 3/4 cup + 1 tablespoon (200 g) regular sugar
Whisk the egg whites well, add the sugar little by little. The mixture should turn into a white, fluffy meringue.
Line a baking tray with baking parchment.
Bake in a 285 ˚F (140 ˚C) oven for 2 hours.
Leave to cool while you make the filling.
Filling:
- 4 egg yolks
- 2/3 cup (150 g) butter
- 3/4 cup + 1 tablespoon (200 g) regular sugar
- 4 tablespoons coffee
- 1 teaspoon vanilla extract
Put all the ingredients into a saucepan and heat until the mixture has thickened. Leave to cool.
Spread the filling over the meringue base.
You’ll also need:
- 3-4 bananas, sliced
- 1 2/3 cup (400 ml) heavy cream, whipped
Distribute the sliced banana over the filling, then spread over the whipped cream.
Now… just enjoy.

Looks amazing! Will try to make this but the translation says 4 cups of whipping cream, that surely must be wrong..? That’s 1 litre of cream!
