These Granola bars are made from this homemade granola mix, and they are perfect as a snack or when you need some extra energy.
Granola Bars (yield: 16 large bars)
- Home made granola (you can find the recipe here)
- + 1 3/4 oz. (50 g) almonds, roughly chopped
- + 7 oz. (200 g) dark chocolate with 70% cocoa solids
Make the granola mix, but add the extra almonds. Leave to cool.
Melt the chocolate in the microwave or in a bowl suspended over a saucepan of simmering water.
Add 3/4 of the granola mixture and mix until well blended.
Line a brownie pan with baking parchment. Tip in the chocolate and granola mixture.
Sprinkle over the last 1/4 of the granola mixture and cover with baking parchment. Press down quite firmly.
Chill for at least 5 hours, then cut into bars.
Store the granola bars in a plastic bag in the fridge – great to have on hand if you need a pick-me-up without the guilt.
