Hello everyone, I hope you’re all well.
These fluffy marshmallows are perfect on top of your hot chocolate, but you could also dip them in chocolate and decorate with festive candy canes.
Here is the recipe, enjoy!
- 4 1/2 teaspoons gelatin powder
- 1/2 cup (125 ml) cold water
- 3/4 cup (170 g) regular sugar
- 1/2 cups (125 ml) glucose
- 1/4 cup (65 ml) water (extra)
- 2 teaspoons vanilla extract
- powdered sugar
- candy canes (optional)
- dark chocolate (optional)
Stir together the 1/2 cup (125 ml) cold water and the gelatin powder and set aside for 5 minutes.
Put the sugar, half the glucose and water (65 ml) into a pan and bring to the boil.
Boil until the temperature reaches 250 ˚F/120 ˚C.
Put the remaining ¼ cup (65 ml) glucose into a mixing bowl and whisk on low speed.
Heat the gelatin in the microwave for 30 seconds, then pour it into the mixing bowl, still whisking.
Carefully pour the boiled sugar mixture (which is 250 ˚F/120 ˚C) into the mixing bowl and whisk on a low speed.
Increase the speed to medium and mix for another 5 minutes, then increase the speed to high and add the vanilla.
Whisk for 5 more minutes.
In the meantime, grease a baking pan with some non-stick baking spray.
Pour the marshmallow mixture into the pan.
Cover the surface with sifted powdered sugar, then chill for at least 5 hours.
Tip out onto a sheet of baking paper, sift with some more powdered sugar and then cut into squares.
Insert a candy cane into the marshmallows to make them extra festive…
And you can of course dip them in chocolate…
