Today I’ll show you how to make licorice chocolate truffles. If you’re not a fan of licorice, just leave it out and roll in cocoa powder instead.
If you love licorice you’ll adore these!
Licorice Chocolate Truffles
- 1 cup + 1 tablespoon (250 ml) heavy cream
- 8 oz. (365 g) good-quality dark chocolate, preferaby tempered
- 1 1/2 tablespoon (25 g) butter
- 1 tablespoon licorice powder (+ extra for rolling the truffles in)
- a handful soft licorice
I use licorice and licorce powder from Johan Bülow, it’s my favorite…
Heat the cream, either in the microwave or in a pan.
Put the chocolate into a bowl, the pour over the warm cream .
If using tempered chocolate your truffles won’t be as sticky as they will if using regular chocolate.
Leave it for a few minutes, then stir until smooth.
Add the butter and licorice powder and mix well.
Cut small pieces of soft licorice and place one small piece into each cavity of the truffle mold.
Transfer the truffle mixture to a piping bag fitted with a circular tip and pipe some of the mixture into each of the cavities.
Refrigerate for 2 hours.
Pop them out…
And roll the truffles into some licorice powder…
If you don’t have a mold like this, just chill the mixture for 60-90 minutes, then make small balls using your hands.
Store in an airtight container in the refrigerator.
They won’t last long, though, they are super yummi…
