Today’s temptations are these delectable Almond Joy Candies, I just love the combination of coconut, almonds and chocolate.
Here is the recipe, enjoy!
Almond Joy Candies (yield: 25)
- 25 whole almonds
- 1 cup (225 ml) sweetened condensed milk
- 1 tablespoon vanilla extract
- just under 1 cup (110 g) powdered sugar
- 2 cups (200 g) desiccated coconut
- 5-7 oz. (150–200 g) dark chocolate
Preheat the oven to 350 ºF (180 ºC).
Put the almonds on a baking tray and toast in the middle of the oven for 7 minutes. Leave to cool.
Pour the sweetened condensed milk into a bowl with the vanilla extract and powdered sugar, stir well.
Now stir in the coconut, then place the bowl in the freezer for about 30 minutes.
Using your hands, make 25 small balls from the mixture.
Place one almond on top of each ball, press down gently.
Place in the freezer again for at least one hour.
Melt the chocolate and leave to cool before removing the candies from the freezer.
Dip each ball into the melted chocolate.
Place the dipped balls onto a baking tray lined with a greased sheet of baking parchment.
Leave to set.
Place the candies into mini paper cases.
These treats are so good,.. they remind me of Bountry, which is my favorite candy bar.
