Hello everyone!
These American style cinnamon buns are the ultimate cinnamon buns.
They are incredibly fluffy and the delicious cream cheese and lemon frosting gives them a lovely fresh taste.
Here is the recipe, enjoy!
American Cinnamon Buns (12 buns)
French Vanilla Sweet Bun dough:
- 1 ¾ oz. (50 g) fresh yeast
- 2 tablespoons tepid water
- ½ cup (125 ml) milk or cream
- 2 tablespoons butter
- 4 tablespoons Jell-O French Vanilla Pudding
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ cup (50 g) regular sugar
- ½ teaspoon salt
- 2 cups (260 g) all-purpose flour
Filling:
- 2 ½ tablespoons (30-40 g) melted butter
- ¾ cup (150 g) light brown sugar
- 1-2 teaspoons ground cinnamon
- 3 ½ oz. (100 g) walnut pieces
Preheat the oven to 350 ˚F (180 ˚C).
Dissolve the yeast in the tepid water. Set aside for 5 minutes to activate the yeast.
Pour the milk or cream into a small bowl and warm in the microwave 1-2 minutes. Add the butter and stir until melted.
Put the remaining ingredients into a mixing bowl. Add the milk/butter mixture and the dissolved yeast. Use the dough hook attachment and mix until everything is well blended. Cover with a clean dish towel and leave to rest for 15 minutes.
After the dough has had its 15 minute rest, mix on medium speed for 20 minutes. It may look like it needs more liquid, but don’t worry, just continue mixing.
Place the dough in a lightly greased mixing bowl, cover with the dish towel and leave to rise for about 40 minutes or until doubled in size.
Turn out the dough onto a floured work surface and roll out to a large rectangle.
Filling: Brush the melted butter over the dough, then sprinkle with light brown sugar, cinnamon and walnuts.
Starting from one long side, lightly roll up the dough like a Swiss roll.
Using a sharp knife, cut the roll into approx. 12 pieces and arrange, cut side up, on a lined baking tray.
Cover and leave to rise for about 20 minutes.
Uncover the buns and bake for 15-20 minutes.
Frosting:
- 4 oz. (125 g) cream cheese
- 1 cup (125 g) powdered sugar
- Juice of 1-2 lemons
While the buns are baking, make the frosting by mixing together all the ingredients.
As soon as the buns are out of the oven, spread the frosting over the buns.

How do I prepare them for breakfast. ? Should I leave them to rise overnight and then bake in the morning?
Hi Kim, you can do the first rise in the refrigerator. Just cover the bowl with plastic wrap and place in the fridge overnight, then proceed with the recipe in the morning.

Can i ignore the jello french vanilla pudding?
Hi Katherine, the recipe will most likely work anyway, but the taste will be slightly different. You may need to add a little more flour.

Can I substitute active yeast for the fresh yeast? Do you know what the conversion would be? How much active yeast I would need? I would really love to make these!

Hi Lisa, you will need about 12-14 grams dried active yeast to substitute 50 grams fresh yeast. Happy baking!
