Sunday was spent relaxing with my family and today I made super delicious vanilla biscotti drizzled with white chocolate with vanilla seeds. The addition of vanilla seeds really adds a touch of luxury to these Vanilla Biscotti.
Here is the recipe.
Vanilla Biscotti & White Vanilla Chocolate
- 2 2/3 cups (350 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115 g) unsalted butter
- 3/4 cup + 1 tablespoon (200 g) regular sugar
- 1 tablespoon vanilla extract
- 2 eggs
- 1 egg white
- 3 1/2 oz. (100 g) white chocolate + 1/2 vanilla bean
Preheat the oven to 350 ˚F (180 ˚C).
Put the flour, baking powder, baking soda and salt into a bowl and stir to mix.
In a mixing bowl, beat the butter and sugar until fluffy, about 3 minutes.
Add the vanilla and one egg at a time, beating for 2 minutes between each addition. Finally, add the egg white.
When everything is well blended and the mixture looks fluffy, add the flour mixture.
Carefully mix to combine.
You may need some extra flour if the mixture is very sticky.
Dust your work surface with flour and shape the dough.
Press out the dough to measure about 8 x 4 inches (20 x 10 cm).
Put the flattened dough on a lined baking tray.
Bake in a 350 ˚F (180 ˚C) oven for about 30 minutes.
After 30 minutes, use a knife to slice into about 1/2 inch (1 cm) slices.
Reduce the oven temperature to 120˚F (50 ˚C) and bake for 30 minutes, then turn the slices over and return to the oven for another 30 minutes.
That’s how the biscotti get their crunchy texture.
After one hour they will be ready. They are good as they are, but I have to say that some white chocolate, melted with the seeds from a vanilla bean, makes them even better.
Melt the white chocolate in the microwave and stir in the seeds from 1/2 vanilla bean.
Using a teaspoon, drizzle the chocolate over the biscotti.
There will be some chocolate left, I like to add it to a glass of warmed milk with some mini marshmallows.

These are amazing biscotti and taste so good. I’ve added Nutella filling to them. Make it into a tart. Works very well.
