More Valentine Day ideas coming up, I just love to create and take photographs of pastel colored things. It’s hard to explain, but it just makes me happy. Plus, this dessert is so fresh and delicious – who wouldn’t like a luscious strawberry dessert for Valentine’s.
Here is the recipe, enjoy.
Simple Strawberry Mousse (6 portions)
- 18 oz. (500 g) frozen strawberries
- 3/4 cup + 1 tablespoon (200 g) regular sugar
- juice of 3 lemons
- 5 1/4 oz. (150 g) mini marshmallows
- 2 1/4 cup (500 ml) heavy cream
- extra whipped cream, to decorate + sprinkle
Put the frozen strawberries into a blender. Pour the lemon juice into a saucepan with the sugar and heat until the sugar has dissolved.
Pour the lemon syrup over the frozen strawberries.
Pulse until the mixture is smooth.
Pour into a saucepan, add the mini marshmallows and heat until the mini marshmallows have melted.
Leave to cool until the mixture has a slightly more set consistency.
Whisk the heavy cream until soft peaks form.
Pour the strawberry purée into the whipped cream,
And fold it in to mix.
Ready to fill some cute dessert glasses.
To get the best possible result, transfer the mousse to a piping bag fitted with a wide circular tip and pipe into the glasses.
Top it off with some luscious whipped cream.
Decorate with colorful sprinkles.
