Hello everyone, the weekend is here again and I hope it will be a really good one for all of you.
The sun has been shining so beautifully today, I’m so grateful for brighter days.
I was inspired to make today’s temptations after having a bite of a Bounty bar.. I was thinking how delicious it must have been as a sweet dough bun.
The result was these scrumptious buns filled with coconut, chocolate and some more chocolate…
Here is the recipe.
Delicous sweet rolls with coconut & chocolate
- 1 quantity brioche dough
- 5 1/4 oz. (150 g) coconut
- 3/4 can sweetened condensed milk
- 3 1/2 oz. (100 g) chocolate chips
Start by making the brioche dough, you don’t really need to leave it in the fridge overnight, but the buns will be even better if you do.

If you have prepared the dough the day before, take it out of the fridge an hour before use to get it back to room temperature.
Preheat the oven to 350˚F (180 ˚C).
Dust your work surface with a little flour.
Use a rolling pin to roll out the dough.
Put the coconut and the sweetened condensed milk into a bowl and stir until well blended.
Spread the coconut mixture over the dough.
Sprinkle over the chocolate chips.
Roll up the dough as you would a Swiss roll.
Slice the roll to make several pieces.
Arrange the pieces onto a lined baking tray, make sure they are spaced apart to allow for spreading during baking.
Bake in a 350 ˚F (180 ˚C) oven for 15-20 minutes. I use the fan setting here for extra fluffiness.
The kitchen smells amazing, is there anything better than freshly baked buns?
They are delicious as they are, but if you like chocolate just melt some extra to drizzle over the baked buns.
