Hello everyone, I hope you are all well.

Last weekend I made some caramel popcorn. I also had an already made brioche dough in the fridge, and when the dough was sitting on my counter waiting to get to room temperature again the idea came to me: caramel popcorn buns…

I suspected that the popcorn would go gooey, but the buns were simply delicious…

Here is the recipe, enjoy!

Caramel Popcorn Brioche

Start by making the brioche dough, it’s not essential that the dough rests overnight, but the buns will be even better if it does.

You can find the recipe for brioche here.

Remove the dough from the fridge at least one hour before use to allow it to get to room temperature.

Preheat the oven to 350˚F (180 ˚C).

Dust your work surface with a little flour, just to prevent the dough from sticking too much.

Let the dough rest while you make the caramel sauce, you can find the recipe here.

Put the popcorn on a tray. .

When the caramel sauce has been left to cool for 10 minutes, pour it over the popcorn.

Mix well using a rubber spatula.

Mix until all the popcorn is covered in the caramel.

Roll out the brioche dough.

Spread the popcorn over the dough, but save some for later.

Roll up like you would a Swiss roll and cut into thick slices. Arrange them on a lined baking tray, making sure to leave some room in between.

Place the reserved popcorn on top, if you like.

Bake in the preheated oven for 15-20 minutes, I use the fan setting here for extra fluffiness.

They smell heavenly when they come out of the oven, though I have to admit that I was a little anxious to taste and see if they were good…

And they were, the popcorn was still good, and the combination of caramel, popcorn and brioche was absolutely scrumptious.
