The weekend is here again, and it’s time for another brownie variety: Rocky road brownies deluxe.
And “deluxe” they are. A delicious brownie base with a slightly scorched marshmallow frosting, topped with salted peanuts, homemade caramel and chocolate ganache…
I don’t claim that these are health food, but it’s the weekend and time for a treat.
Rocky road brownies deluxe
- 1 quantity Manuela’s favorite brownies
- 1/4 quantity Vanilla bean frosting
- 50 g salted peanuts
- Omygosh caramel sauce
- chocolate ganache
Make Manuela’s favorite brownies as described here, freeze for an hour before cutting into neat squares.
These brownies are so good…
Make the Vanilla bean frosting as decribed here.
Transfer the frosting to a piping bag fitted with a wide circular tip, then pipe one or two swirls on top of each brownie square.
Scorch the tops slightly with a blow torch, then place some peanuts on top.
Make the Omygosh caramel sauce as described here.
Drizzle about 1 teaspoon of the caramel sauce onto each of the brownies.
Chocolate ganache
- 6 1/2 oz. (185 g) dark chocolate
- 1/2 cup (125 ml) heavy cream
Put the chocolate and cream into a bowl and place over a saucepan of simmering water. Stir until the chocolate has melted and the ganache is smooth and glossy.
Drizzle about 1 teaspoon on top of each brownie, or more if you wish…
Ready to be enjoyed.
