Good morning everyone.
Today’s temptation is a popcorn and caramel ice cream, it’s absolutely amazing…
You may not believe it, but I can promise you that this ice cream quick and easy to make!
Heavenly Popcorn & Caramel Ice Cream
- 2 eggs
- 4 egg yolks
- Just under 1 cup (180 g) brown sugar
- 2 1/4 cups (500 ml) heavy cream, whipped
- 2 teaspoons vanilla extract
- 5 oz. (150 g) ready-made popcorn
- approx. 1/2 – 3/4 cup (100-200 ml) caramel sauce (to taste)
Put the sugar, eggs and egg yolks into a bowl.
Place the bowl over a saucepan of simmering water.
Whisk by hand or using an electric hand-held mixer for about 8-10 minutes.
Add the vanilla extract.
Take the bowl off the heat and leave to cool for a few minutes.
Stir the whipped cream into the egg mixture.
Line a baking tray with baking parchment and grease with some non-stick baking spray. Tip in the popcorn.
Pour the cooled caramel sauce over the popcorn and stir to mix. (It needs to be slightly cooled or the popcorn will get soggy.)

Add caramel popcorn to the ice cream mixture, add as much as you like.
Pour the popcorn ice cream into containers, I use these small ones which come with a lid.
Garnish with some extra caramel popcorn on top.
Cover and freeze for 4-6 hours.
Ready to be enjoyed…

is it possible to just make the caramel recipe and then marbling it in the ice cream instead of coating the popcorn with it ? or will it become too hard in the freezer ?
Hi Jay, the caramel will start to soften as soon as you take the ice cream out of the freezer. We suspect that the ice cream will be very good with a caramel marbling…:-D

Do I make the runny version or the normal one for the marbling ?
Hello again Jay, both would work well, but it will be easier to get that marbled effect if using the runnier version.
