Today’s temptations are these cute little meringue topped cookies.
So cute and very easy to make.
Here is the recipe, enjoy!
Lovely Easter Cookies
- mini Vanilla wafers
- Vanilla bean frosting + food coloring
Make the Vanilla wafers as described here.
Line one or two baking trays with baking parchment.
Transfer the Vanilla wafer mixture to a piping bag fitted with a Wilton 1A tip (a wide circular tip).
Pipe small buttons onto the lined baking trays and bake in a 350 ˚F (180 ˚C) oven for about 7-9 minutes.
Leave to cool completely.
Make the Vanilla Bean Frosting as described here, add a drop of pink food coloring or another color of your choice.
Transfer the frosting to a piping bag fitted with a Wilton 1B tip.
Pipe small rosettes or swirls on top of each cooled mini Vanilla wafer.
Place in a 212 ˚F (100 ˚C) oven for about 4 hours.
After 4 hours, turn the oven off, but do not open the oven door until the next day.
Result: delicious, crunchy cookies with a sweet meringue topping.

hi i cant understand u put the cookies with de meringue for 4 hours in the oven or its just with the heat of the oven, please answer, thanks
Hi Sasthia Paula, bake the meringue topped cookies in a 212 ˚F (100 ˚C) oven for 4 hours, then turn the oven off and leave them there overnight.

Hello— These look so pretty that I just had to make them for Easter. I spent the whole day at it yesterday. When I opened the oven door this morning I was disappointed to see that the pale pink had faded to beige. They were still pretty but— the cookies had turned to rocks! ROCKS! Most of the meringues lifted right off. I’m so sad to have put so much time and effort into these because they’re inedible. Six dollars worth of vanilla beans and all those precious eggs. What a shame. I had my doubts last night as I couldn’t understand how ANY cookie was going to be able to withstand 4 hours in the oven even at 200 degrees. Please advise. I’ve been baking most of my life and only have had a few disasters. This is one of them.
Oh no so sad to hear, i make this a lot and not have been any problems, sometimes it depends on your oven, if it might was too hot, I’m so sorry to hear that.
