Hello everyone.

Today’s temptations are these delicious banana cupcakes with chocolate chips and some walnuts for extra added crunch.

I decorated the cupcakes with a chocolate caramel rose, a taste of heaven!

Here is the recipe, enjoy.

Banana cupcake & caramel frosting

  • 2 1/2 cups (315 g) all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (230 g) unsalted butter, at room temperature
  • 1 1/3 cup (300 g) regular sugar
  • 4 large eggs
  • 1/3 cup (85 ml) warm milk
  • 2 ripe bananas, mashed
  • 1 – 1 3/4 oz. (30-50 g) walnuts
  • 1 3/4 oz. (50 g) chocolate chips

 

Preheat the oven to 350 °F (180 °C).

Line one or two cupcake trays with 18 paper cases.

Sift together the flour, baking powder and salt. Set aside for now.

Put the butter and sugar into a mixing bowl and beat until fluffy.

Turn down the speed to low and add the eggs, one at a time. Beat between each addition, but do not overmix.

Add the sifted flour mixture and the warm milk.

Add the mashed banana.

…and the chocolate chips.

Beat until just combined.

Use an ice cream scoop to make equally sized cupcakes, one scoop per paper case.

Bake in the preheated oven for about 18 minutes.

Leave to cool completely.

Transfer the frosting to a piping bag fitted with a Wilton 1M tip, then make a rose or a swirl on top of each cupcake.

  1. hi! in my country unsalted butter is not longer sold, i wanted to know if the recipe is the same by using normal butter, thanks

      Hi Brenda, you can make these cupcakes using normal butter, that is no problem.
