I love lemon and use it all year round, there are just so many yummy desserts you can make with this versatile citrus fruit.
An example is this Lemonly love dessert consisting of vanilla cupcakes, lemon cream and a luscious meringue frosting… It’s perfect for the Easter holidays; easy to make and so good!
Here is the recipe, enjoy.
Lemonly Love dessert
- Vanilla or lemon cupcakes
- 2 1/4 cups (500 ml) heavy cream
- 300 g lemon curd
Whip the cream until soft peaks form.
Fold the lemon curd into the whipped cream, you can find the recipe for lemon curd here.
Crumble the cupcakes into small dessert bowls or glasses.
Top with a decent layer of the lemon cream.
Place in the fridge for a few hours.
Transfer the frosting to a piping bag fitted with a large tip and pipe one or two swirls on top of each dessert.
Use a blow torch to slightly scorch the meringue frosting.
