Hello everyone. It’s been a while now, I’ve been working hard to finish my new Swedish book so I haven’t had the chance to write a new post until today.
The Easter holidays are coming up, I hope that you’ll all have some time off to relax and enjoy yourselves.
If you should feel like baking I can highly recommend these soft vanilla sweet rolls with strawberries…
Here is the recipe, enjoy!
Sweet rolls with vanilla & strawberry
- 1 quantity Brioche dough
- 1 quantity Crème pâtissière
- 20 fresh strawberries
- 1 3/4 oz. (50 g) dark chocolate, melted
- 1 oz. (30 g) flaked almonds
Make the brioche dough, you can find the recipe here.
When the dough has risen and it’s ready to use, make 20 buns, approx. 3 oz. (85 g) per bun.
Place the buns on a lined baking tray. Using a spoon, make an indention into the center of each bun and fill with Crème pâtissière.
Bake in a preheated oven, 350˚F/180˚C, for about 10-15 minutes or until golden brown. I use the fan setting here.
Leave to cool slightly on the baking trays.
Cut a strawberry in two and place on top of one of the buns. Repeat with the remaing buns.
Drizzle over some melted chocolate, I use dark chocolate with 70% cocoa solids.
Decorate with some flaked almonds.
Now nothing remains to be done but to enjoy…
