Hello everyone, I hope you are all well.
The recipe of the day is a delicious passion fruit ice cream.
I use ready made passion fruit purée here, I buy it from Pals in Oslo. I also get Callebaut chocolate from Pals.
Passion fruit ice cream
- 1 can sweetened condensed milk
- 3 egg yolks
- 2 1/4 cups (500 ml) heavy cream
- 14 oz. (400 g) passion fruit purée
Put the condensed milk into a mixing bowl with the egg yolks and whisk for a few minutes.
Pour the cream into a separate bowl and whisk until stiff peaks form. Fold it into the egg yolk mixture.
Now add the passion fruit purée, or any other fruit purée of your choice such as raspberry or strawberry. (See here how to make fruit purée).
Carefully fold the fruit purée into the mixture.
Transfer mixture to an airtight container and freeze for at least 6 hours.
Remove the ice cream from the freezer about 20 minutes before serving.
Serve to the people around you… and to yourself, of course.

Hi Amit, this is an egg based recipe. If you want to make ice cream without using eggs, you can just omit them. The consistency will de different, but you’ll still have a delicious ice cream. 🙂
