Good morning everyone, I hope you have had a wonderful summer so far.
The weekend is here again, and for many of us that means more time to bake something yummy for the family. If you visit the recipe index you can find lots of recipes for cookies, buns, cakes and delicious brownies.
These lovely Oatmeal Cookies are super yummy and easy to make, my children love them. You can use white, dark or milk chocolate or raisins, whatever you like best.
Here is the recipe – enjoy!
Oatmeal cookies
- 3 cups (300 g) oatmeal
- 1 1/2 cup (190 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3/4 cup (170 g) unsalted butter, at room temperature
- 1 teaspoon vanilla extract
- 2/3 cup (150 g) soft light brown sugar
- 3/4 cup (150 g) regular sugar
- 2 large eggs, at room temperature
- 8 oz. (230 g) dark chocolate chips (or roughly chopped chocolate)
Put the butter and both sugars into a mixing bowl and beat until fluffy, about 5 minutes.
Add the eggs, one at a time.
Add the vanilla with the last egg.
Put the oats, flour, baking soda and salt into a bowl and stir to mix.
Tip the dry ingredients into the mixing bowl and mix well.
Now add the chocolate and mix until everything is well blended.
Arrange mounds of dough onto lined baking trays, I use an ice cream scoop for this.
Bake in a 350 °F (180 °C) oven for about 12-14 minutes, I use the fan setting here.
Remove from the oven and top with some extra chocolate, if you like, for a better look and an even better taste…
Super yummy with a glass of milk.

Hiii Manuela, what about blueberries? can i put them instead of chocolate or not?
Hi Isabella, you can replace the chocolate with dried blueberries, fresh ones may make the cookies a bit soggy.

I can’t wait to try out this recipe as well! But can I omit the use of baking soda, or replace it with baking powder instead? Pls advise, thanks!
Hi Valerie, if using baking powder instead of baking soda, add 1/2 teaspoon instead of 1. The texture will be different, but the cookies will still be very good. 🙂
