Today’e temptations are delicious S’mores Cookies, made with Graham cookies, marshmallows and chocolate.
Here is the recipe, enjoy!
S’mores Cookies
- Graham cookies
- Marshmallows
- coating chocolate
To make graham cookies you’ll need the following:
- 1/2 cup (100 g) soft light brown sugar
- 2/3 cup (150 g) unsalted butter
- 2 tablespoons maple syrup or runny honey
- 1 1/2 cup (190 g) all-purpose flour
- 1/4 cup (40 g) wholewheat flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla powder, or 1/2 teaspoon ground cinnamon
- sugar, for sprinkling
Put the brown sugar, butter and syrup or honey into a mixing bowl and beat until fluffy.
Sift together the flour, wholewheat flour, salt and vanilla powder (or cinnamon) and add to the mixing bowl in three additions. Beat just until the dough comes together, do not overmix.
Wrap in plastic wrap and leave to rest in the fridge for at least 30 minutes.
Place the dough between two sheets of baking parchment and roll out with a rolling pin.
Cut out shapes of your choice, I use square and round cookie cutters here, and arrange on a lined baking tray.
Sprinkle with some regular sugar.
Bake in a 350 F (180 C) oven for about 10-12 minutes.
Leave to cool a little before sandwiching together with the marshmallows.
Use shop-bought marshmallows, or make your own. You can find my recipe here.
I like to make two batches in two different colors, keeping one of them white. It’s very important that the tray is greased before pouring in the first batch of marshmallow mixture.
Make another batch, add a drop of food coloring (I use pink) and spread over the first layer of marshmallow mixture.
Dust with powdered sugar and leave to rest for an hour.
Lightly dust your work surface with powdered sugar, tip out the giant marshmallow and cut out shapes using the same cookie cutters you used for the Graham cookies.
Sandwich together two Grahams and one marshmallow, then repeat with the remaining Grahams and marshmallows.
Dip the S’mores cookies in some melted coating chocolate.
And there they are – S’mores Cookies.

hello manuela.. ur cookies look so beautiful and perfect !! do u have any tips on keeping the edges perfectly neat? my marshmallow tends to stick to the knife/cutters when cut..
Hi vica, just dust the cutter with some powdered sugar and it will be fine, fokus on the taste the rest is a bonus!
