Good morning everyone! I hope your weekend was a good one.
Many of you enjoy to spend some extra time in the kitchen this time of year. Fall is perfect for baking, and since apples are now in season I wanted to give you this recipe for a delicious apple cake with caramel.
Apple cake is probably one of my favorite bakes, it’s just so delicious with some ice cream or custard. Or even better: drizzled with luscious caramel sauce…
I can promise you apple heaven…

Apple cake with caramel
- 5 eggs
- 1 1/4 cup (250 g) regular sugar
- 10 oz. (300 g) cream cheese or crème fraîche
- 2 teaspoons vanilla extract
- 2 1/2 cups (320 g) all-purpose flour
- 3 teaspoons baking powder
- 5 apples
- granulated sugar and ground cinnamon
- caramel sauce, for brushing (optional)
Preheat the oven to 350 F (180 C). Grease a 10-inch (26 cm) round baking pan and dust with flour.
Cut the apples into wedges and mix with a little granulated sugar and ground cinnamon, set aside.
Put the sugar, vanilla and 5 eggs into a mixing bowl and whisk until fluffy – about 5 minutes.
Sift the flour and baking powder into a separate bowl.
Add the flour mixture and cream cheese (or crème fraîche) to the whisked eggs and beat on low speed until everything is well blended.
Scrape out half of the batter into the prepared cake pan, then add half of the apple mixture. Spread out the remaining half of the batter, then arrange the last of the apple mixture on top.
Place in the middle of the oven and bake for about an hour, keeping a close eye on it after 45 minutes. If it looks dangerously dark – place a sheet of baking parchment over the cake for the last 15 minutes.
Remove the cake from the oven and brush with homemade caramel, you cand find my recipe for caramel here. (Alternatively brush with some apricot jam, just be sure to heat it in the microwave first.)
Leave to cool and serve with some ice cream or vanilla custard.

I made the cake.. Its tasty but
The ingredients fit into 23 cm pan ans not for 26 (i dont know why, but i had only a little batter) . And second, the bottom of the cake was a little sticky , perhaps because i added a little more apple than you did or its just because of the baking time? ( should be baked longer)?

Hi Helwi, hard to say why you only had a little batter, if you added all the ingredients listed? If the cake was sticky, a little more baking time would have done the trick. 🙂

I made this cake with the caramel topping yesterday and my husband and I were both convinced that it is one of the best cakes I ever made. Sooo deleicious!!!!!!!!
