How about making these delicious sticky caramel buns for your family today?
I think they’re going to love them, and the bonus is that they are super easy to make.
Caramel sticky buns
- 1 quantity brioche dough
Filling:
- 1/3 cup (75 g) butter, melted
- approx. 1/3 cup (60-75 g) brown sugar
- Ground cinnamon (optional)
Caramel:
- 1 quantity caramel
- 3 1/2 oz. (100 g) walnuts or pecans, crushed or roughly chopped
Preheat the oven to 350°F/180°C.
Start by making the brioche dough. You don’t have to leave it in the fridge overnight, but the dough will be even better if you do.

Remove the dough from the fridge at least one hour before you need it.
Tip out the dough on a floured work surface and knead well. Roll it out and brush with the melted butter.
Sprinkle with the brown sugar, and some cinnamon if using. Roll the dough like you would a Swiss roll, then cut into 1-inch/2 cm pieces.
Make the caramel sauce, you can find the recipe here. Stir in the nuts of your choice.
Pour the nutty caramel into a baking pan, then arrange the buns on top. Leave to prove for 15 minutes or until doubled in size.
Bake in the preheated oven for about 15-20 minutes, checking after 10.
The buns should be slightly golden, not too dark.
When the buns are ready, place another baking pan on top and then turn everything upside-down. The caramel and nuts should now be on top.
Leave to cool slightly before digging in…
