Hi everyone. If you love cookies as much as I do, you will love these Confetti Biscotti  cloud cookies. They are heavenly and so delicious, both kids and adults love them. I have used the recipe for my favorite biscotti, which you can find here.I was surfing Pinterest the other day, and some cute cookies with sprinkles caught my eye.
I loved the look, but most of the recipes were for sugar cookies. Since I’m not a fan of sugar cookies, I tried to make confetti cookies using my favorite biscotti recipe instead. Just follow the recipe as described here, and add the sprinkles in with the flour.

I usually chill this dough covered in plastic wrap in the refrigerator for at least 2 – 3 hours. This makes the dough easier to roll out.

The amount of confetti is up to you. I used about 1/2 cup of these beautiful confetti – I just love how colorful they are!

Roll out the dough, and cut out cookie shapes. I used this cute cloud shaped cookie cutter, so adorable.

Bake these beauties in a 350F (180C) oven for about 10 minutes. The time depends on the thickness of the dough, but make sure you don’t overbake the biscotti cookies. 10-15 minutes should do it.

Btw, If you don’t have a cookie cutter, you can roll the dough into small balls, flatten them a bit and then bake for about 15 minutes. You will still have delicious cookies, but they will crack on top.
