One of my favorite things to eat in the morning is homemade bread. Especially Norwegian Bread. This bread is super easy to make and all you need is to blend all ingredients together in a large bowl and proof overnight. An overnight rest develops a wonderful bread’s flavor and strengthens its gluten and it effectively “kneads” itself! The story about No- knead bread I believe was started by Jim Lahey from “The Sullivan Street Bakery” and from there so many people has used his technique in making of this No-Knead Bread.
No-Knead Bread ( Yield: 1 large bread ) recipe from Trine
- 400 gram All-Purpose Flour
- 200 gram whole wheat flour
- 1/3 cup (50 g) sunflower seeds
- 1/3 cup (50 g) pumpkin Seeds
- 2 tablespoon Sesame seed
- 2 tablespoon flaxseed
- 1 tablespoon chia seeds ( optional )
- 1/3 tsp active dry yeast
- 2 tsp salt
- 2 cups (500 ml) cold water
- Blend together all of the ingredients together in a large bowl.
- Cover the bowl with plastic wrap, or a towel and let it rest at room temperature overnight, or for at least 12- 15 hours.
- It will become bubbly and rise quite a bit, so be sure your bowl is large enough.
- An overnight rest develops this bread’s flavor, and strengthens its gluten-it effectively “kneads” itself!
- Fold the bread in the bowl with either your hands or a spatula on all sides a few times.

- And let it rest for another 2 hours.
- Heat oven to 450 degrees F. Once the oven is preheated, place the 6-quart Dutch oven (with cover) in oven 30 minutes before baking.
- Remove the Dutch oven from the oven and put the dough carefully on to Dutch oven.
- Bake the bread 30 minutes covered, then another 5 to 15 minutes uncovered until dough is baked through and golden brown on top.
- Cool , before slicing.
This bread is just heavenly as it is without anything.
