It is perfect for summertime, and just to enjoy yourself.

Manuela’s Favorite Daim IceCream Cake
- 250 gram ground almonds
- 4 egg whites
- 200 g powdered sugar
- 1/8 teaspoon cream of tartar or
- 1 teaspoon vanilla paste
- 450 ml cold heavy cream ( put it in the freezer for 25 minuttes)
- 250-300 ml cold sweet condensed milk ( put it in the freezer for 25 minuttes)
- 1-2 teaspoon vanilla paste
- 2-3 teaspoon strong cold coffee
- 150-200 gram daim candy
Preheat the oven to 160˚C).
Put the egg whites into a mixing bowl with the cream of tartar and beat for 1 minute, medium speed. Add the powdered sugar little by little.
Whisk until the meringue on medium/high speed until it is nice and fluffy, add the vanilla paste and ground almonds and blend.
Pour into a round spring form, lined with parchment paper and bake for about 25-30 minutes.Let it cool on a cooling rack,
Put the heavy cream and sweet condensed milk in the freezer for 25-30 minuttes.
Start by crushing the Daim candy bars quite finely. You can get Daim at Ikea.
Dissolve 3 teaspoons instant coffee in a two teaspoons of water and put a side, to cool it off.
Whip the cold cream and cold sweet condensed milk and vanilla paste on medium/ high with a hand mixer in a medium/large bowl, until stif peaks forms.
Stir the coffee into the ice cream , Blend Add in the delicious daim candy and blend. Place the ice cream mixtured over the almond bunn and freeze for at least 5 hours or overnight. Umold the cake , lett it come to roomtemp, for 15-20 minuttes and enjoy
