- 200 g granulated sugar
- 225 g soft light brown sugar
- 1 large egg
- 2 egg yolks
- 1 tsp vanilla paste
- 260 g all-purpose flour
- 55 g cake flour
- 55 g dark cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 300 g walnuts
- 400 g dark chocolate chips
- sea salt

Preheat the oven to 350 °F (180 °C) convectional setting.
Put the butter, sugar and light brown sugar into a mixing bowl and beat until combined about 1 minute.
Add 1 egg and 2 egg yolks, and vanilla paste and mix well for about 1 minute.
Mix together the flour, cakeflour, baking powder and baking soda and salt.
Add the flour mixture, walnuts and chocolate to the mixing bowl, beating until everything is well blended about one minute.
Using an ice cream scoop, arrange equally sized mounds onto lined baking trays. Make sure you place them well spaced apart to allow for spreading during baking.
Bake on the middle rack for about 7-12 minutes, depending on the size of the cookie.
Remove from the oven and place some more chocolate chips on top. They will partly melt on top of the freshly baked cookies.
