Topped with pastry cream, glaze and coconut, these buns takes me back 35 years ago, when I first ate them at my grandma in lovely Bergen, Norway,
Hope you fall in love with these sweet vanilla buns as much as I do.

Vanilla Buns ( makes 20 )
- 750 gram bread flour
- 3¼ teaspoons active dry yeast
- 100 gram sugar
- 2 teaspoon salt
- 2/3 cup 160 ml cold water
- 5 large eggs
- 310 g unsalted butter at room temperature, cut into 10 to 12 pieces
- 1 cup confectionery sugar
- a few tablespoon milk
- 1 teaspoon light corn syrup
Mix the glaze together and warm it in the microwave 30 seconds.
- 100 – 150 gram coconut
In the bowl of a stand mixer fitted with a dough hook attachment, combine all the ingredients. Mix on low speed until all of the ingredients have come together,
Continue than and mix on medium speed for 20 minutes, until the dough becomes sticky and soft and somewhat shiny. Turn the mixer up to medium-high speed for about 1 minute and you should hear it make a slap-slap-slap sound as the dough hits the sides of the bowl.
It means it is ready.
Cover the dough with plastic wrap
Let the dough proof in the refrigerator for at least 6 hours or overnight.
