Hi sweet Readers, Today I share the recipe for Soft Vanilla Cookies

These are typical Norwegian cookies that are mostly made at Christmas tim

-Children love to decorate cookies! Make icing in various colours and bring out some M&Ms
or sprinkles, or let them be creative with edible ink markers.

Soft vanilla cookies

Ingredients:
  • 1/3 cup (75 g) unsalted butter
  • 1 ¼ cup (280 g) granulated sugar
  • Seeds from 1 vanilla bean
  • 1 ¼ cup (300 ml) heavy cream
  • 1-2 tsp vanilla extract
  • 4 ¼ cups (530 g) all-purpose flour
  • 2 tsp ammonium bicarbonate* (bakers ammonia)

 

Preheat the oven to 350 °F (180 °C) and line two baking trays with baking parchment.

Place the butter, sugar and vanilla seeds into a mixing bowl and beat until fluffy.

Add the cream and vanilla extract and beat until well blended.

Sift together the flour and ammonium bicarbonate then add to the mixture in two or three

additions, mixing well between each addition. Wrap the dough in plastic wrap and flatten
slightly. Chill in the refrigerator for at least 3 hours or preferably overnight.
Dust your work surface with some flour and roll out the dough until 1/3-inch (¾cm) thick
Cut out cookies using a cookie cutter, and arrange on the lined baking trays.  Place the trays in
the freezer for 10 minutes. Bake on the middle rack for 8-10 minutes.  Let cool completely before decorating.
Yields: 20-25 cookies
*If you can’t find ammonium bicarbonate (baker’s ammonia), use 1 tsp baking powder and 1tsp baking soda instead.
