I love a light vanilla frosting made without butter, that’s so fluffy, and just melts in your mouth, a frosting that you can use either as a basic favorite or as a
perfect base for adding any of the flavors you love the most. I have listed a few of my favorite variations below, but feel free to use your imagination and
taste buds. Get ready to enjoy some delicious fluffiness!

MANUELA’S FLUFFY VANILLA FROSTING (BASE RECIPE)
  • 2 ¼ CUPS (500 ML) HEAVY CREAM, COLD USE ONE WITH HIGH BUTTERFAT 40%
  • 1 CUP (240 G) MASCARPONE, COLD
  • 200 GRAM CONFECTIONERS’ SUGAR, SIFTED*
  • 2 TEASPOONS VANILLA BEAN PASTE OR VANILLA EXTRACT

 

FLUFFY RASPBERRY FROSTING

  • 1  RECIPE OF MANUELAS FLUFFY VANILLA FROSTING
  • 1/2 CUP COLD RASPBERRY PUREE
  • 1  LEMON JUICE AND ZEST

 

FLUFFY STRAWBERRY FROSTING

  • 1  RECIPE OF MANUELAS FLUFFY VANILLA FROSTING
  • 1/2 CUP COLD STRAWBERRY PUREE
  • 1  LEMON JUICE AND ZEST

 

FLUFFY LEMON FROSTING

  • 1  RECIPE OF MANUELAS FLUFFY VANILLA FROSTING
  • 2 LEMONS, JUICE AND ZEST

 

DIPLOMAT CREAM WITH MASCARPONE

  • 1  RECIPE OF MANUELAS FLUFFY VANILLA FROSTING
  • 1/2 – 1  RECIPE PASTRY CREAM

 

FLUFFY OREO FROSTING

  • 1 recipe of Manuela’s Fluffy Vanilla Frosting
  • 2 cups finely crushed Oreo cookies, sifted and packed

 

INSTRUCTIONS FOR MANUELA’S FLUFFY VANILLA FROSTING (BASE RECIPE)
    1. Pour cold heavy cream ( into a large bowl, add in mascarpone and powdered sugar and with a whisk, whip the cream, until stiff peaks form.
    2. Add in vanilla bean paste or vanilla extract and with a spatula combine.
    3. You now have your base for a delicious vanilla frosting that you can turn into many flavors.
    1. If, by chance, you have over-beaten the frosting simply add a few teaspoons of cold heavy cream straight from the refrigerator and carefully blend it makes the cream perfect again!

 

*If your preference is a less sweet frosting, simply use less powered sugar.

MANUELA’S FLUFFY VANILLA FROSTING IS THE BASE RECIPE FOR THE FOLLOWING VARIATIONS.
For each variation, blend in added ingredients using a spatula to combine. Then have a taste — they are all so delicious!

    • takk for det, denne frosting er best å lage fersk, og lages på bare noen minutter! anbefaller ikke å fryse det men du kan jo teste å se om det funker!

    • i have never tried to freeze so cant say, but you can make it ahead of time, if it is to stiff, simply add some whipping cream and combine

    Is it heavy cream or whipped cream? I normally use whipped cream to whisk till stiff peak. Heavy cream from what I remember is not in liquid form.

    I AM a fan of butter. And homemade buttercream. However YOUR fluffy recipe sounds amazing and quite different from the others I have seen or tasted.
    My grandkids are more used to whipped cream frostings as for the last 10yrs or so their other grandma has ordered those for bdays. I used to make homemade with buttercream types.
    I think they might really like this-and so might I-which would be amazing! I have NEVER liked the cakes they got for special occasions. Long story tho. Anyway thankyou! I would love to get your book. I have to wait tho. Only get my fixed once a month.

    • Hi, Laura, i know in the US, everybody loves buttercream, This frosting taste just like the most delicious vanilla ice-cream, but try to use vanilla bean paste, it makes such a difference in taste!

  13. Hello so excited to try this , could this frosting be used to pipe flowers ( roses, hydrangea..etc) will it withstand ? Also could this recipe have alternatives added to the vanilla frosting for example peanut butter to make it a peanut butter frosting . Would that work?

    • Hi Julie this cream pipe really well, and yes you can add peanut butter to get peanuts butter frosting . Best of luck
