I love a light vanilla frosting made without butter, that’s so fluffy, and just melts in your mouth, a frosting that you can use on cupcakes, in filling in cakes etc and taste like vanilla ice-cream you got your frosting, it is heavenly!

VANILLA FROSTING
  • 2 ¼ CUPS (500 ML) HEAVY CREAM, COLD USE ONE WITH HIGH BUTTERFAT 40%
  • 1 CUP (240 G) MASCARPONE, COLD
  • 1 OR 2 CUPS ( 100-200 GRAM )CONFECTIONERS’ SUGAR, SIFTED*
  • 2 TEASPOONS VANILLA BEAN PASTE OR VANILLA EXTRACT, OR SEEDS SCRAPED OUT  FROM 1 VANILLA BEAN
INSTRUCTIONS; FOR VANILLA FROSTING
  •  Pour all the ingredients into a bowl and whisk it fluffy, it takes just a few minutes.
  • It´s ready to pipe on cupcakes.
  • If by chance, you have over-beaten the frosting simply add a few teaspoons of cold heavy cream straight from the refrigerator and carefully blend it together with a spatula, it makes the cream perfect again!
  • *If your preference is a less sweet frosting, simply use less powdered sugar.

    • takk for det, denne frosting er best å lage fersk, og lages på bare noen minutter! anbefaller ikke å fryse det men du kan jo teste å se om det funker!

    Hi manuela!, is this frosting slightly grainy? Or will the heavy cream simply dissolve the confectioners sugar

    • this frosting is fluffy and smooth, and because i powdered sugar it will not be grainy

    • i have never tried to freeze so cant say, but you can make it ahead of time, if it is to stiff, simply add some whipping cream and combine

    Is it heavy cream or whipped cream? I normally use whipped cream to whisk till stiff peak. Heavy cream from what I remember is not in liquid form.

    I AM a fan of butter. And homemade buttercream. However YOUR fluffy recipe sounds amazing and quite different from the others I have seen or tasted.
    My grandkids are more used to whipped cream frostings as for the last 10yrs or so their other grandma has ordered those for bdays. I used to make homemade with buttercream types.
    I think they might really like this-and so might I-which would be amazing! I have NEVER liked the cakes they got for special occasions. Long story tho. Anyway thankyou! I would love to get your book. I have to wait tho. Only get my fixed once a month.

    • Hi, Laura, i know in the US, everybody loves buttercream, This frosting taste just like the most delicious vanilla ice-cream, but try to use vanilla bean paste, it makes such a difference in taste!

  14. Hello so excited to try this , could this frosting be used to pipe flowers ( roses, hydrangea..etc) will it withstand ? Also could this recipe have alternatives added to the vanilla frosting for example peanut butter to make it a peanut butter frosting . Would that work?

  15. Hello! Your fluffy vanilla frosting got me rave reviews for my cupcakes. The only thing I wasn’t sure was whether I need to refrigerate the cupcakes once they’ve been iced with this frosting or can they sit in room temperature for hours? If so, how long can they stay in room temperature? How do you store the leftover frosting? I assume any unused portion needs to go in the fridge if it’s made with whipped cream and mascarpone or cream cheese. This is very similar to my whipped cream cheese frosting recipe, except I use regular sugar instead of powdered sugar. I like your version as it seems much lighter and less sweet and suits the palette here better. Thanks for sharing this recipe, now I have another alternative as I also am not a huge fan of buttercream and the single most common feedback is it’s too sweet. Do you have any Swiss meringue frosting recipes? Thanks.

    • the best thing is to pipe the cupcakes just before serving, you can leave it in the fridge, but the color will change a bit after some hours in the fridge!

I was wondering, if this recipe could be used for caramel frosting, but I am not sure with the consistency if I add caramel sauce in it.     About how much does this recipe make? Would it be enough to do a multiple layer cake AND decorative flowers on top?

    • It is enough for 24 cupcakes, as longs as it is not to cream on each, you can fill a cake and cover the outside, depending how much cream you like on the cake
