May 17, Norway’s Constitution Day is almost here, so these coming weeks it is all about cakes to serve on that special day.
So if you love Norwegian Cakes keep an eye on the new recipes coming these coming weeks.
This cake is a classic Budapest cake, I made a delicious lemon frosting that is out of this world, so delicious so fresh.
Try to use Organic lemons it really makes a difference in taste with this frosting
I also added raw licorice powder, if you don’t like it, just skip it.

BUDAPEST ROLL & LEMON FROSTING AND LICORICE

  • 250 GRAMS EGG WHITES
  • 450 GRAMS SUGAR
  • 200 GRAMS GROUND ALMONDS
  • 75 GRAMS JELL-O PUDDING – INSTANT VANILLA

Filling

  • LEMON FROSTING SEE RECIPE HERE
  • RAW LICORICE POWDER, OPTIONAL
  • RASPBERRY, BLUEBERRY, STRAWBERRY

TOPPING

  • LEMON FROSTING SEE RECIPE HERE
  • BLUEBERRY, RASPBERRY
  • NORWEGIAN FLAGG, OPTIONAL

 

  1. Preheat oven to 320F / 160 C°
  2. In a large bowl, whip egg whites until stiff peaks form. Slowly add the sugar while beating the egg whites on low speed.
  3. In a medium bowl, blend the ground almonds with the Jell-O Pudding-Instant Vanilla
  4. With the use of a spatula, carefully fold in the almonds / Jell-O Pudding-Instant Vanilla mixture with the egg whites.
  5. Fill a piping bag fitted with a large round nozzle and pipe stripes from one side of the baking tray to the other side, pipe each stripe close to each other.
  6. Bake in the middle of the oven for about 20 min, or until set.
  7. Let the meringue cool completely.
  8. While meringue is cooling, make the lemon frosting, you can find the recipe here.
  9. Flip the cake upside down onto a new sheet of parchment paper or silicon matt, carefully peel off the parchment paper/silicon matt
  10.  Spread the lemon frosting over the bottom of the cake, add raw licorice powder
  11.  Place the raspberries, blueberries, and strawberries on top of the cream.
  12. Place the long side of the cake in front of you and start rolling it. I find using the parchment paper and a silicon mat underneath helps the rolling ones you get started, hold on to the paper rather than the cake. Once rolled up make sure the edge of the roll is facing down.
  13. Pipe a border on each side with a Wilton #1M nozzle, with the rest of the lemon cream, and add some blueberries and raspberries and if you happen to celebrate May 17, Norway’s Constitution Day add a Norwegian flag on top of the cake.

  1. Hey, i live in hungary, budapest. This cake name is Kardinális szelet (Cardinal slice). Nobody call here Budapest roll. This is a very famous hungarian dessert and all the budapest pastry shop have some version.
