Candied almonds made with real vanilla bean, a sugary coated almond, it is crispy and so delicious. Perfect to make in advance for the holiday season as it keeps well for 2 weeks. ( if it lasts that long)

Candied Almonds ( makes 500 gram)

  • 500 gram whole raw almonds
  • 300 gram powdered sugar or  250 gram white sugar
  • 150 ml water
  • Seeds from 1 vanilla bean ( optional) 

Directions; ( see step by step pictures below)

Place the whole raw almonds, powdered sugar or (white sugar if using), and water in a large saucepan.

Use a sharp knife to split the vanilla bean lengthwise and scrape the seeds into the saucepan as well.

Cook over medium heat, stirring constantly with a wooden spoon until the sugar crystallizes onto the almonds and turns white. This takes about 10-15 minutes.

Don’t take it off the stove to early, you want the sugar to be on the almonds and not fall off!
Also, stir at all times otherwise the almonds will burn! 

Spread the warm almonds on a silicon matt and let cool completely.

Enjoy,  or give it away as a gift.

Store at room temperature in a jar, in an airtight container, up to a 2 weeks.
