Directions for the Chocolate Cake Layer
- When making my recipes I do recommend using a scale instead of us. measurements as it is more accurate.
- Make one recipe Swedish Kladdkaka in an 8-inch (20 cm ) springform, you can find the recipe →here.
- Cool the kladdkaka, if you are using a baking pan as I do, add a cake collar on the inside of the cake tin.
Directions for the Orange Cream Cheese Layer
- In a small bowl, add the orange gelatin powder
- Press freshly pressed orange juice from oranges, preferably organic oranges for better taste
- Pour the freshly pressed orange juice in a small saucepan and heat until it starts to boil.
- As soon as the orange juice starts to boil, pour the boiling orange juice over the orange gelatin powder, whisk for at least 1-2 minutes to make sure the gelatin is completely dissolved.
- Cool the mixture, then refrigerate the jell-O mixture for 10-25 minutes or until it almost starts to set ( check it often so it does not set too much)
- In a large bowl add the softened cream cheese, pour over the cold heavy cream, Using an electric mixer set at a low-medium speed and whip it up until fluffy.
- Add the cooled orange Jello-O and continue mixing until fully combined.
- Add vanilla bean paste ( optional) and combine with your spatula.
- Pour the orange cheesecake filling over the cooled kladdkaka cake, smooth the top with a rubber spatula. ( I use a cake, Colar on the inside of my cake tin)
- Cover with plastic wrap, and refrigerate while you make the chocolate layer.
Directions for the Chocolate Cream Layer
- In a medium bowl, add unsweetened cocoa powder, sugar, espresso powder, and salt.
- Add hot water, and with a whisk combine, place the bowl in the refrigerator to get cold.
- Take the heavy cream out of the fridge and place it into the freezer for 15 minutes.
- After 15 minutes, Add the cooled chocolate mixture into a bowl, take the super cold heavy cream out of the freezer, and pour it over the chocolate mixture.
- Add 1/8 tsp of baking powder, this is optional but baking powder in whipped cream, let you whip it longer without making it grainy. ( don’t add more baking powder in this recipe then I mention in the ingredients list.
- Use your hand mixer or stand mixer ( with a whisk attachment) and start on →low and mix for 1 whole minute.
- Continue mixing on →medium for about 1-3 minutes more, as soon as you see the mixture starts to get thick stop the mixer ( do not over-mix ) and just combined everything with your spatula.
- Take the cake out of the fridge and spoon the chocolate cream on top of the orange cream cheese mixture.
- Smooth the top with a rubber spatula, cover the cake with plastic wrap and place the cake in the freezer for about 30-40 minutes while you make the orange Jell-O Layer.
Directions for the Orange Jell-O Layer
- In a small bowl, add the orange gelatin powder
- Press freshly pressed orange juice from oranges, preferably organic oranges for better taste
- Pour the freshly pressed orange juice in a small saucepan and heat until it starts to boil.
- As soon as the orange juice starts to boil, pour the boiling orange juice over the orange gelatin powder, whisk for at least 1-2 minutes to make sure the gelatin is completely dissolved.
- Cool the mixture completely at room temp ( not in the fridge ) →the Jello-O should be cool and not stiff )
- As soon as the Jell-O is cooled, Take the cake out of the freezer and pour the cooled Jell-O on top of the chocolate layer.
- Place the cake in the fridge until the Jell-O hardens or leave it in the fridge overnight for an even better taste.
