The holiday season is around the corner and I love sharing some of my favorites sweet treats to make during the holiday seasons.

My favorite to make each holiday season is Candied Vanilla Almonds.
These candied almonds are so crunchy and delicious.
These candied almonds are a bit different than last year’s recipe.
After these are coated a sugary coating I toast these in the oven for 8 minutes, giving these almonds an even better crunch and even more delicious.
If you don’t like almonds, you can replace it with pecans, or try making it with salted peanuts.

I´m also sharing a recipe for hot chocolate made with real chocolate, after all, it is the season for hot chocolate, and this recipe is so delicious.

Candied Vanilla Bean Almonds

425 gram whole raw almonds
250 gram white sugar
2 teaspoon vanilla bean paste
Pinch of fine sea salt
100 gram water

Candied Licorice Almonds

425 gram whole raw almonds
250 gram white sugar
2 teaspoon raw licorice powder
Pinch of fine sea salt
100 gram water

Hot Chocolate ( serve 2 large mugs)

115 gram dark chocolate (72 %)
450 gram milk
100 gram heavy cream
1 teaspoon vanilla bean paste ( optional) or pure vanilla extract

Directions for the Candied Vanilla Almonds

Preheat the oven to 180 C

Line a baking sheet with a silicone mat or a parchment paper and set aside.

Place the almonds, sugar, vanilla bean paste, fine sea salt, and water into a large saucepan. Stir with a wooden spoon to combine.

Cook over medium heat, stirring constantly with a wooden spoon until the sugar crystallizes and the almonds turn into a sugary coated almond, this takes about 10-15 minutes.

Remove the sugary coated almonds from the heat, and pour it out onto the prepared baking sheet.
Bake the almonds in the center of the oven for 8 minutes.

Cool completely, store in a jar at room temp for up to 2 weeks.

Direction for the candied Licorice Almonds is the same as described above, only instead of vanilla bean paste, You add in raw licorice powder.

Directions for hot chocolate;

In a medium saucepan add the chocolate, milk, heavy cream, and vanilla bean paste.

Place the saucepan over medium-low heat, use a whisk and stir.
As soon as it starts to come to a boil and starts to bubble, and the chocolate is completely melted remove from heat.

Pour it into 2 large mugs, enjoy as it is or add some whipped cream or marshmallows on top and enjoy.
